100% Guilt-Free Brownies
Emily’s Flourless Brownies!
I’m finally sharing my epic brownie recipe that everyone was VERY disappointed that I didn’t include in the LivWell Cookbook (my bad!!)
FIRST OFF, here’s why I didn’t include it:
The primary focus of LivWell was to illustrate how approachable and practical being, living, shopping, and eating healthy really is!
The brownie recipe has a longer ingredient list, a longer cook time, and can be pricey if you don’t have any of the ingredients.
It didn’t feel like it really fit the scope of the book, so I opted out of including it… BUT LUCKY FOR YOU here it is for freeeeee! Enjoy!
Emily’s Flourless Brownie Recipe
Ingredients:
1 large ripe avocado, mashed (or use 2 small avocadoes)
1/2 cup cacao powder
2 eggs
1 cup coconut sugar
1 tbs almond butter or cashew butter
1 tsp baking powder
1 tsp vanilla extract
1/4 tsp salt
(optional) 1 tsp cinnamon
1/3 cup chocolate chips (plus, more for adding on top)
Sprinkle of Maldon Salt
Directions:
Preheat oven to 325F (350F in altitude) & grease 8x8 baking pan with salted butter. If you prefer to line your pan with parchment paper instead, that also works. But I prefer greasing the pan.
Then, mash the avocado.
Mix together all ingredients & pour in the pan; sprinkle some additional chocolate chips on the top and bake for 40min (30-35min in altitude).
Take out from oven and sprinkle with Maldon Salt. Let cool completely before serving.
