100% Guilt-Free Brownies

Emily’s Flourless Brownies!

  • I’m finally sharing my epic brownie recipe that everyone was VERY disappointed that I didn’t include in the LivWell Cookbook (my bad!!)

  • FIRST OFF, here’s why I didn’t include it:

    • The primary focus of LivWell was to illustrate how approachable and practical being, living, shopping, and eating healthy really is!

    • The brownie recipe has a longer ingredient list, a longer cook time, and can be pricey if you don’t have any of the ingredients.

    • It didn’t feel like it really fit the scope of the book, so I opted out of including it… BUT LUCKY FOR YOU here it is for freeeeee! Enjoy!

Healthy Gluten Free Brownies

Emily’s Flourless Brownie Recipe

Ingredients:

  • 1 large ripe avocado, mashed (or use 2 small avocadoes)

  • 1/2 cup cacao powder

  • 2 eggs

  • 1 cup coconut sugar

  • 1 tbs almond butter or cashew butter

  • 1 tsp baking powder

  • 1 tsp vanilla extract

  • 1/4 tsp salt

  • (optional) 1 tsp cinnamon

  • 1/3 cup chocolate chips (plus, more for adding on top)

  • Sprinkle of Maldon Salt

Directions:

  • Preheat oven to 325F (350F in altitude) & grease 8x8 baking pan with salted butter. If you prefer to line your pan with parchment paper instead, that also works. But I prefer greasing the pan.

  • Then, mash the avocado.

  • Mix together all ingredients & pour in the pan; sprinkle some additional chocolate chips on the top and bake for 40min (30-35min in altitude).

  • Take out from oven and sprinkle with Maldon Salt. Let cool completely before serving.
